Enchilada Quinoa Bowl- Serves 2
1 cup quinoa, cooked
½ cup chicken sausage, cooked
¼ cup peppers, diced
1/8 cup onions, diced
1/8 cup enchilada sauce
Juice of ½ a lime
1 tsp garlic, chopped
1 tsp cilantro, chopped
1 ½ ounces sharp cheddar cheese
Salt and pepper to taste
Sauté peppers onions, garlic. Add in the chicken sausage and quinoa and cook until hot. Then add in the enchilada sauce, lime juice, cilantro salt and pepper and mix. Split the filling between 2 bowls and top with cheddar cheese and serve.
